Peel and roughly dice the squash. This healthy winter soup comes in many forms, and here are two of my favorites — one with Mediterranean flavors and the other Thai style. Rub flesh with a little canola oil; season with salt and pepper.
Add the diced squash, salt and milk.
Don't hide its wonderful autumn flavors behind all sorts of funny additions…sometimes something has to be left alone to speak in its own.
